I apologize if this week is a little heavy on the recipes... I've been experimenting a lot more than usual lately, and just had to test out this recipe for guacamole, mainly because it belongs to Chipotle! Everyone raves about their guac, and though I've never tried it, I knew it would probably be better than the usual store-bought stuff. To sum it up, it was a lot better than I thought, and so simple to make. I definitely recommend this next time you're craving any type of chip dip.

Chipotle's Guacamole (makes enough for four)
- 2 Hass Avocados, peeled
- 1/2 of a Jalapeno pepper, seeded and minced
- 1/4 of a red onion, finely chopped
- 2 heaping Tablespoons of Cilantro, finely chopped
- 1/2 of a lime, juiced
- 1/4 teaspoon salt
Put all of the ingredients in a bowl and mash together until smooth. (I put the pepper, onion and cilantro in a food processor first to finely chop everything together).
Enjoy with your favorite tortilla chips!

Chipotle has the BEST guacamole by far! I love guacamole (and avocados in general). I make this quite a bit at home :)
