Peaches & Cream popsicles

When my August issue of Vogue came in the mail, I was more excited about spread on fruit pops than the cover story on Marion Cotillard... that woman kind of creeps me out in almost every movie she does! Peaches are one of my favorite summer fruits, and when I saw this recipe I knew I had to try it. They turned out very fruity, and much better tasting than any popsicle you can buy in-stores.



Peaches & Cream popsicles (makes 3-4)
- 4 ripe peaches
- 1/2 cup sugar
- 2 t freshly squeezed lemon juice
- 1/2 cup heavy cream
- pinch of salt

Bring a large saucepan of water to a boil over high heat. Cut an 'x' in the bottoms of all of the peaches, lower them into the pot of boiling water, and let them stand for about 30 seconds.

Remove from the saucepan and remove the peach skins when cool enough to handle. Halve the peaches and remove the pits. Puree in a blender along with the other ingredients until completely smooth. 

Pour into popsicle molds and freeze.
